1 lb high quality fluke or other white fish (ask your person for recommendations)
Juice of 6 limes
Juice of 2 lemons
1 clove garlic chopped
1 tbsp sugar
2 tbsp chopped cilantro
1/4 thinly sliced red onion
1 jalapeno thinly sliced (no seeds)
Olive oil
Salt/Pepper
1 mango chopped (for topping)
1 avocado chopped (for topping)
Recipe
Chop fluke into 1 in cubes season with salt and pepper and store in a bowl in the refrigerator while prepping the other ingredients.
Juice the lemons and limes into a bowl/cup. You want approx 1 cup juice. Add 1 tbsp sugar.
Thinly slice 1/4 red onion. Chop 1 clove garlic. Chop cilantro. Thinly slice jalapeno.
Lay out prepared fluke into single layer on a plate or tupper. Cover with juices and chopped ingredients. Stir to combine. Drizzle with 1 tbsp olive oil.
Let sit in the fridge for 4 hours.
Chop mango and avocado. Stir into ceviche. Season with salt and pep to taste.
Serve in clear glass with chips or delicious on its own for less calories.
