Kitchen Sink Blueberry Chocolate Banana Bread

INGREDIENTS

  • 2 ripe bananas, mashed

  • 2 tbsp almond butter

  • 1 egg

  • 2 tbsp coconut oil or ghee

  • 1/4 cup almond milk

  • 1.5 cups paleo flour or almond flour

  • 2 tbsp cocoa powder

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • 1 tsp salt

  • coconut flakes

  • raisins/craisins

  • blueberries

  • chocolate chips or cocoa nibs

  • ADD any dried fruit, nuts, or fun thing you can think of…

RECIPE

  1. Start by pre-heating the oven to 350.

  2. Grease a loaf size baking dish or pie dish with melted ghee or coconut oil.

  3. In a small bowl combine the wet ingredients and mash together (2 ripe bananas, 2 tbsp almond butter, 1 egg, 2 tbs melted coconut oil or ghee, 1/4 cup almond milk).

  4. In a separate bowl, combine the dry ingredients (1.5 cups paleo flour or almond flour, 2 tbsp cocoa powder, 1 tsp baking soda, 1 tsp baking powder, 1 tsp cinnamon, and 1 tsp salt).

  5. Combine the wet and dry ingredients and stir until well combined.

  6. Add in the yummy fixings including blueberries, raisins, chocolate chips, coconut flakes, etc. and mix.

  7. Pour batter into prepared baking dish and top with additional blueberries if desired.

  8. Bake at 350 for 20-25min until a tooth pick or knife inserted in the middle comes out clean.

I made up this recipe when I was avoiding gluten and dairy and it’s yummy, delicious, and free from added sugar. The sweetness and richness comes from the natural dried fruit and nuts/butters used. I hope you enjoy!!!
